I had OneDrive disabled in gpedit when I Immediately debloated everything as soon as I installed Windows, is Microsoft moving people’s personal files to One Drive without people’s permission or something?

Anything on the C drive is fair game for onedrive. It’s corporate sanctioned malware.
They have and they train models on it. Google trains models on your gdrive and I’d be willing to bet Gemini sips anything on your phone.
